Happy Heart Day Friends!

This week I found some fun colorful containers from the Dollar Tree to reduce the usage of baggies over & over every day for Lunch Packing! Have you ever seen the little mesh drawstring bags from the wedding isle? They made great sacks for almonds & sunflower seeds 🙂 I’m so glad my kids like to eat nuts! The paper doilies were a fun way to write a Love note!

Flowers Motivate Me!

Do you Feel inspired by Flowers? It’s amazing to me how even just a $3 UpScaled bouquet can brighten my room and give me  that fresh added spunk in my step to motivate me. When I picked up these bargains last week, they inspired me to rid my house of the Rest of the Christmas decor! Time to make room for Springs arrival!!  Even though it has been a chilly January here in Florida, we know it will be warmer soon 🙂

This month our whole family got the fever, cold and cough virus  so we have been doing lots of resting and trying home remedies  which some have worked and some have not.

I have learned to not beat myself up if I needed to take a nap and Rest! God has shown me that He has some great plans for this year and He needed to slow me down to do it!!

Yes my house has been in disarray (but don’t judge 😂) when the only strength you can muster is getting everyone doctored up with essential oils for respiratory, apple cider vinegar rags for fevers, & making homemade cough syrups; then that’s all you can do is collapse into bed when everyone else is tucked in. I honestly don’t ever remember feeling a fever like that before! We all know that if mama ain’t feelin good, then the household seems to crumble. I know where I fell short in neglecting my vitamin regime (which will be another post). And even though my husband also wasn’t feeling well, he was a great trouper too! He kept the kids homework on task (for those who went to school & those who had make up work). He kept uniforms clean and in order and filled water bottles at night while I pack the snacks.  He took runs to stores for tissues, chapsticks, pineapple juice,  Organic apple cider & coconut oils, lemon & honey since that’s what we were going through in bulk 😅 While I made homemade soups. Yes I am Blessed with a Wonderful Husband!! So today  these flowers have inspired me to muster the energy to clean our Room! I think it will make him smile 😁when he comes home from school. For me, a Flower bouquet gives me a spurt of energy to spruce things up! To pick up, to dust, vacuum and then enjoy the flowers and a lit smelly candle in a Clean Room! Do flowers & candles do that for you?

I pray Health & Strength on your family this Winter!! 💚 Take the time to WAIT on the Lord before He knocks you down n makes ya. Lol!

Do You See a Hutch Door?

When my Northern Friends are waking up to snow outside your window, I’m waking up to this beautiful Alaskan trail from my visit in 2011.

Do you ever Let your mind Transplant  you back in time and REMEMBER old memories?  You remember what you were wearing, what the air smelled like, who you were with and what emotion you FELT for being there. . That’s how I feel, every time I pause and gaze at this picture!  That crisp and cold Alaskan day around sunset in February as I stood in COMPLETE AWE at the Breathtaking Beauty surrounding me! One photo just doesn’t do it justice!!! 😯

👉🏽WHY IT’S HANGING ABOVE MY BED?

The glass in the door on my antique hutch shattered in our move to FL 5 yrs ago but I knew this door frame would make some neat frame one day! Last winter I enlarged this photo for a wall hanging in the door/frame. This year i added some thrifted glitter branches to the sides & hung it above our bed. Soon it will be time to pack it away another year and figure out what I’m hanging above the bed for spring 🤔 Are still enjoying your Winter Decor, Or Totally READY FOR SPRING?

Indian Curry Soup

There’s a new restaurant In Jupiter Kalena & i Experienced one evening after Christmas shopping, called BOXO. When I saw they had a $8 vegetable curry dish, we were ON IT!!

That was over a month ago and ever since I contacted the fever last Saturday, I’ve had a hankering for curry again! I found this recipe in my old Pampered Chef cookbook, tweaked it a bit and it turned out delicious.  I added 4 tsp Of curry powder but I think I would add 2 TBS next time, so the curry would be a bit stronger 🙂

This “soup” could be sipped as that, or enjoy over Rice which we like to do.

Prep Time: 30 min // Total Time: 1 hour //YIELDS: 8-10 servings //Calories: 220 per serving

Ingredients you need:

  1. 1-2 cups deboned grass fed Chicken + 4-6 cups stock (whether chicken, vegetable or mixed) (last week I cooked a whole Cornish hen in the crockpot all day, & saved all the broth for this recipe
  2. 1 1/2 Tbs Olive Oil
  3. 1 cup slivered Organic carrots
  4. 1 cup Yukon gold potato, unpeeled, diced(optional)
  5. 1/2 large onion chopped
  6. 2 tsp peeled, grated (or pressed) fresh GingerRoot
  7. 3 Garlic Cloves, pressed
  8. 2 Tbs Organic Curry Powder
  9. 3 tsp Organic ground Coriander
  10. 3 Tbs cornstarch dissolved in 2 Tbs cold water
  11. 2 cups bite-sized broccoli
  12. 3/4 cup plain Greek Yogurt
  13. 1/4 cup chopped fresh Cilantro

A. First, figure out which way you are going to get your chicken and broth. If time is not on your side, you can always go to the deli & get a small cooked bird for around $5.00. Slice off the breast meat & boil the rest down in 6 cups water for your chicken broth.

B. In  A large sauté pan, add the oil. When it is hot, sauté carrots, potatoes, onion, gingerroot, & garlic. When the onions are browned but carrots are not fully cooked, add the Salt & Pepper, Curry & Coriander powders for 1 minute  until fragrant. Then add the stock and let come to a boil & whisk in the cornstarch mixture.

C. Remove 2 cups of the broth from skillet. Add 3/4 Greek yogurt to it & whisk until smooth. Then gently whisk it Back in the whole Skillet dish.

D. Add the Chicken & Broccoli. Bring to a simmer and reduce heat to low until Broccoli, Carrots & Potato are tender. (About 8-10 min) Now is the time to get your instant rice cooking as well if you want this over rice. Or if you prefer long grain rice, then start it when you start this recipe so everything with be ready at the same time.

VEGAN 🌱 = this recipe can easily be made vegan. Just use Vegetable stock. Also snap peas & red peppers are great in this.

I hope you Enjoy this as much as Kalena and I did. The 1st time around I forgot to put cilantro on it. The leftovers over brown rice, & cilantro made it delightful again. 😋

The 1st Sunrise Of 2K19!

Happy New Year!!

Where is your secret place to reminisce, write, study, read, or dream? Mine is the Ocean. Every 1st day of the year since 1994, I have loved making my way down to the ocean to enjoy the very 1st Sunrise Of the new year! 

Today I had every intention of filming this LIVE, but 10 minutes before sunrise, I saw that i should have registered for the LIVE capabilities for YT YESTERDAY to give it 24 hrs! 

WELL!!!! That there was MY 1st OBSTACLE OF 2019!!! 

As you see this video unveil; you’ll see the Sun had a little Longer time bursting its rise into the sky because of a Big Cloud obstructing its path to shine! 

Needless to say, this became such a clear picture of truth for me and I hope you enjoy the message in this episode.

The Old is Past…

Are you just as ASTOUNDED that 2018 is over as I am? This Year has been A lot of PURGING & MINIMALIZATION in my life than ever before… and it’s really only just Begun!!  maybe that’s why it’s taken me so long to get this post written and share with you my next Imperfectly Perfect Episode. (It Still didn’t come out EXACTLY  how I envisioned but After 4 revisions I had mercy on my Pakistanian editor 😅) lol!

Something inside me Feels SO MUCH JOY when I See or Find an old piece of SOMETHING For Super cheap or Free… NOT because I’m happy in the SHAPE that it’s in – Which is usually Rough!! But if I instantly SEE in my head the beauty it COULD BE TRANSFORMED INTO, then I’m drawn to Take it home IF it meets my requirements:

1. Will this FIT into my mini Van now? (Haha – I need a pickup truck for my hauls!)

2. Can I LIFT IT ALONE?

3. Do I have the Tools AND TIME needed to UpCycle and ReCreate it into what I envision it can be?

Usually 1 & 2 are a YES, because “where there’s a WILL ~ There’s a WAY!” 😉 if I want it bad enough, It’ll happen! Haha!

#3? … well, that’s another story! Lol!

I started writing the post several days ago with the verse 2 Corinthians 5:17 in mind and planned on posting it today. But Ironically enough, The Bible App sent me a notification today that This SAME Verse is the Verse of the DAY TODAY!! So it’s confirmation that Someone needs this encouragement… that Whatever Your life looked like this last year or years prior, no matter how messed up you feel like it was -,with stains and scars and ugliness; God wants to Rescue YOU!  He wants to Remake YOU! He wants to Restore YOU! He wants to UPCycle Your Life into  something so beautiful and useful. Remember he doesn’t necessarily “Need” us but he “Wants” us!

As I transformed my front & side porch this Christmas with things in my attic & garage that I’d been collecting … I strangely felt God’s presence as I enjoyed putting this together so much that I thought I’d share it in a video episode too.

For if I could inspire just one person out there to UpCycle one thing they were thinking of throwing away… or that someone else threw away for no good… and help you see that that’s exactly what God wants to do for YOUR Personal New year 2019; it will be worth all of the hours I’ve spent sharing with you what I did for my family. Let Him Make you a New Creature and let the past GO! 👋

Sock Wrapping Tip

Sock Wrapping Tip: 

~ You know those little black hooks that are on socks when you buy them? Keep the sock Hook on, poke it through the paper and Hang them on the tree. So Why did I not think of this before? 🤷🏽‍♀️I don’t know but I’m doing it this year! 😁💯 Socks for everyone 😂

We always hide little gifts in the tree.. and typically they’re opened last… you know… that moment when EVERYTHING IS OPENED and there’s something Sad about a bare tree…. It just means you Have Ones to Love.
